Almond Butter Toast with Berries

Almond Butter Toast with Berries is a quick, no-stress breakfast or snack recipe full of protein, fiber, vitamins, and minerals. It’s super customizable, super simple and SUPER YUMMY.

How to Make Almond Butter Toast with Berries

Start with your English muffin. If it isn’t sliced in half to make a separate top and bottom, slice it now!

Throw your English muffin in the toaster. While it’s toasting, grab a handful or two of your favorite sweet fruit (I went with strawberries and blueberries!). Wash them and slice them if needed.

Grab your toasted English muffin, your almond butter, and your fresh fruit to ASSEMBLE!

(Sorry not sorry. And yes, I had to.)

Evenly spread about 2 tablespoons of your almond butter onto the English muffin, then add some fruit. Top with chia, flax, hemp hearts, pumpkin seeds, a drizzle of honey or anything you like.

Done. You just conquered breakfast or snack time in NO time.

What Can I Use Instead of…

Almond Butter: ANY nut butter. Peanut butter, cashew butter, whatever your favorite is!

Fresh Berries: apples, bananas, chocolate chips, or anything that sounds good to you.

Other toppings: a sprinkle or drizzle of flax seeds, chia seeds, pumpkin seeds, hemp hearts, honey, or maple syrup!

What If I Don’t Have a Toaster?

Use your oven! Set your oven to 350 degrees F.

On a piece of foil, oven-safe plate or a small pan, place your English muffin halves. Toast in the oven until they reach your desired toastiness! Then continue with the steps listed above to complete the recipe.

Why Should I Use a 100% Whole Grain English Muffin?

Most Americans do not eat enough whole grains. Whole grains are a great source of B-vitamins, folate, fiber, and other nutrients important for optimal bodily function.

A label that reads “100% whole grain” will supply your body with the benefits of the entire wheat grain! The USDA recommends Americans try to make half of their daily grains whole grains.

  • Toaster, toaster oven, or oven
  • paring knife
  • spoon

Ingredients

  • 1 100% whole grain English muffin
  • 2 tbsp almond butter, or nut butter of choice
  • 1/2 cup fresh berries or toppings of choice
  • 1 tsp chia or ground flax seeds for topping
  • honey, for drizzling

Instructions

  • If needed, slice English muffin in half. Toast to desired toastiness.
  • Top English muffin with nut butter.
  • Add desired toppings and enjoy!
