No-Bake Chocolate Coconut Energy Bites

These no-bake chocolate coconut energy bites are a quick, easy, healthy snack ready to eat in 10 minutes or less! Two of the bites make a great snack, but they’re so chocolatey and delicious sometimes I help myself to one or two more. 😉

Recently I’ve been having pretty intense chocolate cravings…and what better to combine them with than coconut? It just makes sense.

A Few Thoughts on No-Bake Chocolate Coconut Energy Bites…

You will need a blender or food processor for this recipe. To get the proper consistency, it is important to grind the oats and dates finely along with the rest of the ingredients.

I’m excited about these because many of you have asked me to create recipes that required a small amount of time, ingredients, and stress to make. You wanted them to taste awesome (duh) and be healthy too–so I got to work and here you have it!

This recipe features a few of my go-to healthy snack ingredients:

old fashioned oats: packed with fiber, carbohydrates + protein


chia seeds: healthy omega-3 and omega-6 fats for heart health, protein, and fiber


dark chocolate: rich in flavor, and with a surprising list of health benefits


medjool dates: fiber and a great tasting source of unrefined sugar, plus they give the bites a great texture

No-Bake Chocolate Coconut Energy Bites

These no-bake chocolate coconut energy bites are full of protein, fiber, and healthy fats. They are a delicious, healthy snack to keep you full between meals!

Equipment

  • Blender or food processor
  • measuring cups and spoons
  • silicone spatula
  • parchment paper
  • small bowl

Ingredients

  • 1 cup old-fashioned oats
  • 5 medium pitted medjool dates
  • ¼ cup dark chocolate cocoa powder
  • ½ cup finely shredded macroon coconut, unsweetened, plus more for coating I use Bob's Red Mill
  • 2 tbsp chia seeds
  • 1 pinch salt
  • ⅓ cup raw local honey
  • 1 tbsp coconut oil, melted
  • ½ tsp vanilla extract
  • ⅓ cup mini chocolate chips, optional

Instructions

  • In a blender or food processor (see notes), combine all ingredients except optional chocolate chips. Blend on medium to high speed, stopping to scrape down the sides as needed. This process may take about 5 minutes total, because it's important to make sure everything is blended evenly. You'll know it's done when the mixture forms a ball in the blender and no longer sticks to the sides.
  • Add chocolate chips, if desired. You'll have to really work them in since the mixture is thick!
  • Turn out the mixture onto parchment paper. Form the mixture into twelve bites. Note: The dough should be easy to handle, and should only stick to your hands slightly as you form the bites.
  • Lastly, coat the bites in more coconut shavings if desired. Store in an airtight container for up to two weeks.

Notes

IMPORTANT: Using a smaller blender or food processor (such as a 5 cup or 3.5 cup) works best for this recipe. Using a larger blender makes it more difficult overall in my experience. 
You can add the chocolate chips directly to the blender with the rest of the ingredients, but keep in mind that they will be chopped into bits. I’ve tried it both ways, and I prefer to leave the chips whole, despite it being more of an arm workout to incorporate them into the mixture!
