Healthy Chia Banana Bread

Equipment

Ingredients

  • 3 large overripe bananas
  • 1/2 cup honey or maple syrup or 3/4 cup white sugar
  • 1 large egg
  • 1/3 cup unsweetened applesauce or 1/3 cup vegetable or melted coconut oil
  • 1 1/2 cups unbleached all-purpose flour
  • 3 tbsp chia seeds
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions

  • Preheat oven to 350°F. Line bread pan with parchment paper.
  • In a large bowl or bowl of a stand mixer, mash or beat bananas until no large pieces remain. Some clumps are okay!
  • To the same bowl, add honey, egg, and oil. Mix until well incorporated.
  • In a separate bowl, add remaining ingredients. Stir well and add to wet ingredients. Don't overmix!
  • Pour batter into a prepared bread pan. Bake in the oven at 350°F for 50-65 minutes or until a toothpick inserted in the center comes out clean.
  • Allow loaf to cool in the pan for about 10 minutes before carefully removing from loaf pan and allowing it to cool on a cooling rack. Slice and enjoy! Store in a Ziploc bag for up to 5 days. No refrigeration needed.
