Healthy Chia Banana Bread

- 3 large overripe bananas
- 1/2 cup honey or maple syrup or 3/4 cup white sugar
- 1 large egg
- 1/3 cup unsweetened applesauce or 1/3 cup vegetable or melted coconut oil
- 1 1/2 cups unbleached all-purpose flour
- 3 tbsp chia seeds
- 1 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
Preheat oven to 350°F. Line bread pan with parchment paper.
In a large bowl or bowl of a stand mixer, mash or beat bananas until no large pieces remain. Some clumps are okay!
To the same bowl, add honey, egg, and oil. Mix until well incorporated.
In a separate bowl, add remaining ingredients. Stir well and add to wet ingredients. Don't overmix!
Pour batter into a prepared bread pan. Bake in the oven at 350°F for 50-65 minutes or until a toothpick inserted in the center comes out clean.
Allow loaf to cool in the pan for about 10 minutes before carefully removing from loaf pan and allowing it to cool on a cooling rack. Slice and enjoy! Store in a Ziploc bag for up to 5 days. No refrigeration needed.
