- 3 cups old fashioned oats
- 1 cup pecans, halved
- 2 tsp pumpkin pie spice
- 3 tbsp brown sugar
- 3 tbsp flax seeds
- 1/3 cup pumpkin seeds
- 1/2 tsp salt
- 1/3 cup coconut oil, melted
- 1/3 cup raw local honey
- 2 tsp vanilla extract
Preheat oven to 350°F. Place a sheet of parchment paper on a large baking sheet and set aside.
Combine dry ingredients in a large bowl and stir well.
In a microwave safe bowl, melt the coconut oil. Add honey and vanilla and whisk well to combine.
Combine wet and dry ingredients and stir well with silicone spatula.
Spread mixture onto prepared baking sheet. Bake for 25-30 minutes or until pecans are fragrant and oats are golden brown. Half way through baking, give the granola a good stir. Keep in mind that when you remove it from the oven, it will keep cooking for a few minutes, so be sure to keep an eye on it towards the end so it doesn't burn. Allow granola to cool completely before placing it in a jar or container. Store at room temperature for up to a month.
