Pumpkin Pecan Granola

Pumpkin Pecan Granola is an easy, nutritious snack, yogurt topping, or DIY gift! With toasted pecans, pumpkin seeds, fiber-filled oats, and flax seeds (to name a few), this homemade, customizable recipe is sure to please!

Ingredients

  • 3 cups old fashioned oats
  • 1 cup pecans, halved
  • 2 tsp pumpkin pie spice
  • 3 tbsp brown sugar
  • 3 tbsp flax seeds
  • 1/3 cup pumpkin seeds
  • 1/2 tsp salt
  • 1/3 cup coconut oil, melted
  • 1/3 cup raw local honey
  • 2 tsp vanilla extract

Instructions

  • Preheat oven to 350°F. Place a sheet of parchment paper on a large baking sheet and set aside.
  • Combine dry ingredients in a large bowl and stir well.
  • In a microwave safe bowl, melt the coconut oil. Add honey and vanilla and whisk well to combine.
  • Combine wet and dry ingredients and stir well with silicone spatula.
  • Spread mixture onto prepared baking sheet. Bake for 25-30 minutes or until pecans are fragrant and oats are golden brown. Half way through baking, give the granola a good stir.
    Keep in mind that when you remove it from the oven, it will keep cooking for a few minutes, so be sure to keep an eye on it towards the end so it doesn't burn.
  • Allow granola to cool completely before placing it in a jar or container. Store at room temperature for up to a month.
